Strawberry season is here, yippee! We usually go strawberry picking but haven't had a chance to do it yet. Hmmm, might need to make that happen next week! Still, we've enjoyed buying local strawberries by the quart. Clara can sign strawberry and she loves them!
Broma Bakery has a fun recipe for Strawberries and Cream Popsicles. Wesley helped me cut the strawberries in half before roasting them. What a beautiful color the berries turn when you roast them. The "cream" portion of these comes from greek yogurt and milk. We used whole versions of both since I'm not a fan of low-fat dairy. The only other ingredients are honey and vanilla extract. Simple, pure and healthy ingredients! We loved making and eating these popsicles. Clara gave them her approval as well :)
Since strawberry's best friend is rhubarb, you MUST make these Strawberry Rhubarb Yogurt Muffins from A Spicy Perspective. These are a staple for us every summer. You know I love to freeze things, so after you bake these and let them cool, pop them in the freezer. Then thaw and enjoy with your coffee anytime!
To round out my top 3 summer recipes, grilled chicken has to say "hello" of course. My hubby loves to grill, and we totally dig what he serves up. This delicious Grilled Chicken recipe from All Recipes is my go-to. Slice it on top of quinoa (and strawberries if you're feeling fancy) or a fresh green salad with some of your garden veggies. YUM-to-the-YUM! Cut the sugar a bit and it's still rockin.
